Girmitiya Cuisine

Bihari migrants had to adapt to the new food available in the host country. However, certain traditional Indian preparations like Baigan Chokhey (mashed and spiced aubergine) or Dal Puri (puffed bread stuffed with dried lentils) and ingredients like Paanch Foran (five spices) were preserved by the first generation and passed down to the next. Successive generations developed a taste for mixed cuisines which combined traditional Bihari spices and preparations with those of the host country.

Note: Paanch Foran, is an essential spice used the Indian kitchen both at home and abroad.
